Rising Pinot Noir 2022

Bright, red berry fruits wrapped in delicate smoky, earthy aromatics. This wine is plump and fleshy with bright red fruits dominating the palate. Gentle, soft, mouth-filling tannin with a fleshy whole bunch feel to finish leaving you salivating and wanting more.

Vinification: 

777 - 35% Whole−bunch fermented for 6 days
777 - 100% Whole-bunch for 7 days
10/5  - Carbonic maceration for 5 days before stomping and leaving for another 5 days as a whole−bunch ferment
Clone 5 - Destemmed and on skins for 7 days.

These individual parcels were then pressed to old french puncheons and barriques for maturation for 10 months. These were then racked and blended in stainless steel and aged for a further year before bottling in January 2024.
